Black tea has high or 100% oxidation or fermentation and has high flavonoid content. The majority of its catechins are converted into theaflavins and thearubigins, which produce a variety of flavors and stronger aroma. The shapes of black tea leaves vary widely, and include twist, curly, spiral, ball, rolled, and broken leaf.

Brewing suggestion

Hot Tea:

For an 8-ounce cup use about 2.5 grams (0.09 oz.) of tea. For a 44-ounce tea pot use about 10 grams (0.35 oz.) of tea. Heat water to 205 to 215 degrees and steep for 3 minutes. Simply sip the tea during brewing to find your preferred steeping time. Add more tea if stronger flavor is desired.

Iced Tea: Brew hot tea as described above. Let the tea cool down to room temperature (do not add ice) then cool down in refrigerator. When ready to drink serve as is or over ice. Enjoy within 24 Hours.
