Chase away the winter doldrums with this intensely warming, rich tea. It’s akin to traditional chai in its spices, but instead of black tea, it’s made with shou pu-erh tea. Shou pu-erh is an incredibly dark, smooth, full-bodied tea, and it takes classic chai to a whole new level with its opulent flavor.
Shou pu-erh isn’t the only ingredient that gives this tea a rich, enticing flavor. Caramel bits add a satiating sweetness, cloves provide a deep warmth, ginger amps up the spice factor and other spices add enough oomph to warm even the chilliest of evenings.
Our favored activity to pair with Caramel Chai Pu-erh? Roasting chestnuts at the fireplace while a snowstorm rages outside. But if you can’t do that, you can still pair it with some incredible foods. Try it with spice cakes, spiced biscotti, chocolate sweets or simple pound cakes.
This tea makes a great chai latte! Froth up some fresh, whole-fat milk and mix a drink with a 1 to 2 ratio of chai to milk. Or add a splash of milk and a spoonful of brown sugar or dark honey for a quick, tasty treat.

Steeping Suggestions: 1 1/2 tsp. per 8 oz. water @ 203 F. Steep 4-5 min. Sweeten to taste.
