These unusually well-oxidized leaves exude a unique aroma when brewed that is reminiscent of early fall in New England – crisp, fresh, yet dry and ripe – the smell of “foliage”. This ruddy character is balanced by a prominent floral perfume that produce notes that can concisely be called an “autumn flower arrangement”.
The flavor has a vegetal base that is like artichokes with a touch of herbs, like dill or arugula. This is balanced by a sweet fragrant quality of ripe pears. These earthy, flowery and fruity aspects provide a lingering floral finish that is heady, yet natural and mellow.
