Oolong Tea- Li Shan Oolong
Other Names: Pear Mountain Tea, Li Shan Wu Long
Origin: Mt. Lishan, Taiwan

Description: Li Shan Oolong is harvested at an altitude of 2,200 meters from Mt Lishan, the tallest mountian in Taiwan. Because of the cold temperatures at this altitude, the morning and evening fog and little sunshine, there are less catechins in the tea buds and thus less bitter ingredients, the buds are softer, leaves are plumper and have an increased amount of pectin. The tea is a fresh green color, with a sweet, smooth taste and elegant fragrance. The soup is a honey green color and the leaves will last for quite a few steeping before getting bitter.

How to brew: The tea should be brewed with fresh mineral water at 100 °C (212°F) using smaller intervals than normal, somewhere around 45 seconds to 1 minute steep time. In order to maintain the original flavor of tea, we suggest not using the tea leaves7-8 times at most.
