A Brand New Tea Crafted for the 12 Teas of Christmas 2019!
This is my first tea in the countdown that is a new tea (as opposed to the reblends) and I decided on the concept of Gingerbread Pancakes because – well, because it sounded quite lovely, to be honest. I wanted to enjoy the combination of gingerbread flavors with maple. Plus – pancakes. I mean, really, need I say more?
This blend starts out with my standard blend fo black teas: Assam, Ceylon & Yunnan. Then I went with my traditional Pancake Breakfast flavors (including maple) & added some gingerbread notes, specifically, lots of ginger, some cinnamon, cloves & nutmeg & just a wee bit of molasses essence.
The result? REALLY GOOD. I don’t know if what I’m tasting is actually gingerbread pancakes, mostly because I’ve never actually tasted gingerbread pancakes. (I think I’m going to have to try out a gingerbread pancake recipe this Christmastime because it does sound good.) Here is what I am tasting: a ginger-y forward note with hints of cinnamon weaving their way in and out. I taste gingerbread. I taste that cakey kind of note that you would taste from our Pancake Breakfast tea – it is a softer note than our traditional Pancake Breakfast tea because this is gingerbread pancakes and not Pancake Breakfast. The maple notes are there – but they are softer as well. I like the way they mingle with the molasses flavors from the gingerbread.
It’s really, really good. Something that I’d be happy to wake up to on a winter-y morning. And of course, it is organic, VEGAN, gluten-free & allergen-free!
