Tea of the Week for April 11, 2016!

52Teas has a couple of “Zabaglione” teas – Frank created a Strawberry Zabaglione and a Blueberry Zabaglione and we even reblended the Strawberry Zabaglione . . . so I thought: “Why not a Raspberry Zabaglione?” And really, I think that raspberry is ideal with the creamy, sweet flavor of a Zabaglione custard. It seems to bring out that sweet wine note – perhaps even more effectively than the sweeter flavors of strawberry or blueberry. The tart and tangy note of raspberry adds a brightness to the sweet, creaminess of the custard.

I started with my go-to black tea base of organic Indian and Chinese teas but after the initial taste test, I decided that with these flavors, it needed a little more – something. So I added some of Verdant Tea’s Laoshan black teas to round out the flavor and give the tea a little more depth. And – WOW! It worked! Freeze-dried raspberries and all natural flavors bring this tea to life!
