Tea of the Week for April 11, 2022!

This is my Mother’s Day tea (for more details about that, keep on reading!) I love the way this one turned out: lots of peachy flavor with a warm & satisfying spice note.

This tea starts with a special black tea grown in Anxi county of Fuji. It has a thick, rich mouthfeel that reminds me somewhat of a dark Oolong with a naturally occurring stone fruit note to it so I thought it’d be perfect for my mom’s peach tea.

Then I added some freeze-dried peaches & some spices: allspice, ginger, cinnamon, nutmeg, cardamom & clove. The result is a lovely tea that has a beautiful peachy tone to it with a pleasantly warm spice medley. Not too spicy: just warm and cozy. Sweet, juicy & delicious!

It’s also vegan, gluten-free, allergen-free & all natural!

more about this tea: As I mentioned above, this is my Mother’s Day tea (again, early – look at me! I’m being proactive rather than reactive. Wow! It only took her more years than I care to mention for me to get like that! Yet – no promises that it will always be this way, this is only like 2 holidays I’ve done this for versus the many that have passed by & me creating the teas after the fact.)

Anyway, I created this tea for my mom who requested more spiced tea – could I make a tea that tasted like peach preserves with spices in it like her gramma used to make for her when she was young? Now, I’ve never actually tried the tea that her gramma used to make for her. But I can make a peach tea with spices in it.

to brew: shake the pouch to ensure that the ingredients are well-incorporated. Use 3g of tea to 12oz of nearly boiling water (205°F) & steep for 3 ½ minutes. Strain & allow to cool for at least 10 minutes.

please note: the label of this tea was printed with a suggested steeping time of 3 minutes. I have since tested it with a steep time of 3 ½ minutes and I like it even better at 3 ½ minutes than the 3 minutes. The Fujian Huang Jin Gui doesn’t get bitter with a slightly longer steep time!

serving suggestions: I like this one hot but it’s also quite good iced! It doesn’t really need additions – it has a mild sweetness to it from the peaches & the spices in this help accentuate the sweetness a bit. If you want a sweeter cup, a wee bit of honey is really quite lovely in this! Definitely take this tea for a resteep! The second steep is even better than the first!
